I made homemade eggnog tonight using a recipe I found. It goes like this:
- 6 eggs
- 3/4 cup sugar
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla
- 4 cups of milk
- Dash of powdered nutmeg
Then, blend everything together. I made two changes: first, I blended the whites of the eggs separately. Unfortunately, after blending in the rest of the ingredients the entire thing went thin. Second, I left out the nutmeg because I forgot to add it in.
It tastes okay, but the vanilla is overpowering. I think I'll use less vanilla in the next batch, and perhaps I'll blend everything separate from the whipped whites and then fold them in for maximum thickness.
